Try without convertor, the inner cable may be just too short when attached to the Kat clocks.

The best thing to do is go out with a car following and mark the speeds on the clocks for now.
It is very likely that the difference in wheel sizes may mean that the clocks were geared, do you know if the Bandit was a mph or kph model?

You are so old skool Fossie! GPS Speedo app (or Satnav that shows speed) on the Smartphone (or is that Smartfone?) for calibration.
I would have thought it wouldn't be possible to get a Kat speedo (mechanical) to read the correct speed with a different front end on due to total circumference of wheel and the parts inside the clock - I would have thought the components need to be matched.
If you didn't want to go with marks on the outside of the clock face then maybe you could get readings via a Smartphone and ask one of the places that makes Katana clock faces if they could do a custom one for you?

When the Bandits were released in UK there wasn't enough bikes for demand , so we got Belgian and German ones , delivered but couldn't PDi them until we got new headlamps and clocks (mph)for them ....they never read the same as genuine UK ones! So it could be you have a drive that will be out with the Kat speedo more than you expect.

Mines approx 10mph out since I fitted the 17” wheels. I put my car sat nav on tank and went for a ride. Noted the speed on sat nav and put some stickers on clocks
