As for the not starting on the button sparki, there should be a black white wire that goes from the plate that the solonoid is bolted to with a cross head screw, the other end attaches to a female connector out of the loom by the fuse box, it always gets missed as it hides under the said fuse box.

As you said best guess is stagnated fuel in the carbs and jets.
Getting the carbs off is easy enough as I assume you've done this already at least once, but the main airbox has a clip that joins the carb joining bit , if you slacken that it slips back and gives well enough room. As for refitting, attach carbs to airbox first then line the carbs up to inlets and with a bar between frame around airbox lever it forward after wd 40 the inlets and plop they are on. Famous last words!
